After working all week and waking up way too early, I find it relaxing to wake up late on Saturday and make a fun, delicious breakfast. Since I love Mexican food, I had an idea to make breakfast tacos. Here they are..... hope you enjoy!
Ingredients:
(For 4 tacos)
4 tortilla shells
1 avocado, cubed
1 roma tomato, cubed
shredded cheese (either cheddar or a Mexican mix)
4 turkey sausage links
4 eggs
1/2 red pepper, minced
4 mushrooms, chopped
In a small pan, cook the sausage links on medium high heat.
Warm the tortilla shells in the over for a few minutes or warm the tortillas up in the microwave for 10 seconds. Add cheese to the tortilla shells.
In a small pan, add red peppers and saute for 1-2 minutes before adding the mushrooms.
Once the water from the mushrooms have released, about 4-5 minutes, add 4 eggs that were beat separately in a small bowl.
Once the eggs have are cooked, serve the eggs with pepper and mushrooms in the shell. Divide evenly. Top with avocado and tomatoes. You can also add salsa and sour cream... depends on what you like in your tacos :)
