Gougeres with Gouda Cheese

i had a few friends over for drinks and appetizers - and these little delicious things were a hit!  They are light and airy, and absolutely delicious!  At first I was intimidated because I thought they would be hard to make but now I can't stop making these!  I have tried many alternate ingredients, but the below recipe seems to be the best.

Ingredients;
1/2 cup water
4 Tbsp unsalted butter
1.2 tsp sugar
1/4 tsp salt
1/2 cup all purpose flour
2 large eggs plus 1 egg yolk for egg wash
3/4 cup gouda cheese, shredded
Fresh ground pepper to top

Preheat to oven to 400 degrees.  In a medium pot, add sugar, salt, water and butter until the butter is melted.
 Add flour and fully incorporate.
 Be sure the heat is not too high, leave on the stove top for about a minute or two, stirring constantly.
 Add the dough into a mixing bowl.
Add 1 egg at a time, making sure that the first egg is fully incorporated before adding the second.
 Add the grated gouda cheese and stir just until the cheese is incorporated.

 I do not have a proper piping bag, so I added all of the dough into a Ziploc bag and sealed it.  I cut one of the corners it's ready to go!

Squeeze the dough into small little dots on a cookie sheet lined with parchment paper until you wither run out of room or run out of dough.


 Beat 1 egg yolk in a small bowl.
 Brush the dough with the egg yolk wash.  I add freshly grated pepper or you can leave them plain..
Place them in the oven.  Bake for about 10 minutes, reduce the heat to 350 degrees, then bake an additional 20 minutes.  You can take one out of the oven and cut it in half to be sure if it is fully cooked.
