Zucchini Fries

Sometimes I just want to make something simple and fun.  I bought some zucchini and I never got the chance to use it, so I thought it would make the prefect snack.....  Beware, theses are addicting!
Ingredients;
1 zucchini
1/2 cup flour
1 egg
1/4 c milk
2 cups breadcrumbs, Italian style
1 cup oil
1 Tbsp kosher salt

On one plate, add the flour and spread around the plate.  In a small bowl, beat one egg and add the milk.  On a second plate, spread out 1 cup of breadcrumbs, the add more when necessary.

Cut the zucchini in half and then make 4 slices, length wise in the zucchini.  Cut into fries.
 Add a few sticks to the flour, covering the zucchini with flour.
 Drop the fries into the egg mixture.
 Soak in zucchini in the egg batter, covering each piece.
 Remove and cover with breadcrumbs.  Set aside.
 Add the fries tot he hot oil.
 Lay out a paper towel.  When they are golden brown, remove from the pan and let sit on the paper towel.
Sprinkle with salt or Parmesan cheese.  Serve immediately.  Ranch salad dressing is a great dip!

Peanut Butter Chocolate Chip Cookies

When you hear that snow is coming, it's always best to have some warm cookies and cookies in case you run out of food.... you must prepare!  haha  I love peanut butter cookies.  Recently, I started adding chocolate chips which makes them that much better!
Ingredients;
1/2 c butter
1/2 c granulated sugar
1/2 c brown sugar
1 egg
1 tsp vanilla
1/2 c peanut butter
1 1/4 c all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
3/4 tsp baking soda
1/2 c chocolate chips

In a mixing bowl, add butter, brown sugar, sugar and mix until incorporated.  Add egg, vanilla and peanut butter.  Mix until blended.

 Mix in peanut butter.
 Add the dry ingredients, mix until incorporated.
Stir in chocolate chips.  Drop dough on a cookie sheet about an inch apart.
 Using a fork, dipped in water, flatten the cookies.
Bake at 350 degrees for 10-12 minutes.
 Thyme 2 Taste.....

If you're feeling creative, add a scoop of ice cream in between the cookies to make an ice cream sandwich!

Rosemary Crusted Lamb Chops

I always thought that lamb chops were difficult to make.  But the  more I make them, the more I realize how easy it is.  I recently made the lamb chops for a dinner, and they turned out great.  Everyone prefers the temperature of the meat differently, so be sure that you cook the lamb to your preference, but be sure not to overcook the lamb.


Ingredients;
2lbs trimmed rack of lamb
8 sprigs of rosemary, minced
4 gloves or garlic, minced
5 sprigs of thyme
salt and pepper

Mix of mushrooms
2 sprigs of rosemary

Mince the rosemary, garlic and combine with the thyme.


Salt and pepper the rack of lamb.
Press the herbs and garlic into the lamb.
Cover in plastic wrap and let them sit overnight.

Preheat the oven to 450 degrees.
In a large pan, on medium-high heat, add mushrooms, sprigs of rosemary, salt and pepper.  Saute for about 5 minutes.

Push the mushrooms to one side and add the lamb.  Sear for about 3-4 minutes.
 Flip the rack of lamb, and sear another 3-4 minutes.
Remove the pan from the stove and place the entire pan into the oven.  Bake in the oven for a few minutes longer, until the meat thermometer inserted reads 125 for rare 135 for medium rare.  Remove the lamb from the oven.  Cover and let sit for 10-15minutes.
Slice the lamb, serve immediately.
 Serve with roasted potatoes, and a vegetable of your choice.  Thyme 2 Taste....

Apple Cake with Brown Sugar Topping

Nothing is better than warm apple cake during the winter.  Well, it does get better - add a scoop of vanilla ice cream!!


Ingredients;
1 1/3 cup all-purpose flour
3/4 c sugar
3 tsp baking powder
1/4 tsp salt
1/4 cup butter
1 egg beaten
3/4 c milk
1 tsp vanilla
2 apples, peeled and sliced
1 apple, peeled and grated

Topping;
1/3 c brown sugar
1/2 tsp cinnamon

Preheat oven to 350 degrees.
Combine flour, sugar, baking powder and salt in a large bowl.
 Add butter.
 Cut or rub in butter, until crumbly.
Prepare the apples - peel and grate one.  Peel and slice the other 2.

 Form a well in the center.  In another bowl, beat egg until frothy.  Mix in vanilla and milk.  Pour into well.

Stir just to moisten, add grated apple.  Stir just to incorporate.


 Add the batter into a greased baking pan.
 Add the sliced apples in top of the cake, pushing down the apples into the batter.
Mix together the brown sugar and cinnamon and sprinkle on top of the cake.

Bake for 50-60 minutes.
